Zumba



it told me to join the party. so i am.

Mike and I scored. Big. 
We got a  brand new PS3 for $299
it came with everything. all the gadgets and extras.
Paddles, Camera, other paddles, (Wii like paddles)
(i guess i have more to learn, but i mean i am a brand new owner. give me time)
including 10 games.
one being Zumba
so.. being the person i am, never skipping out on a party..
im joining in. 
we'll see how it goes.
i love to work out, but i have a problem. I procrastinate. 
if i don't have a schedule and some one to push me, i tend to, let it slide.
because, me.. being a  "yellow" personality (holla at my yellows)
i don't like to do things that aren't fun. so if Zumba is a party....
 i think i'll be good at it.

some kid named Oscar was really loved.
so therefore, i need to paint lots of things.
but, because i like to take on so many things at once, this door has been neglected and has become a last priority. because of my bad decision, the shadow in the dark hallway looks like a person standing there from afar.
im done with the scares. 
it will get done today.

Cast Iron Pineapple Upside Down Cake

Holy Heaven....
I wish i wasn't a Dumb Dumb. I plan on taking pictures of more of the steps in every recipe i do, but.. my sweet precious Canon Rebel xs is OUT OF ORDER.
in the move i lost my charger, and i live in Podunk and haven't been able to get me another one. I've been using Mikes waterproof fishing camera in the mean time, but once you go Canon everything else is.... Dumb. ( nothing rhymes with canon, that would've made sense) So since i don't love that camera, i don't keep it on my hip like i normally do my Baby Canon, so of course i forgot to take pictures of this Amazing Amazingness.
but i will share the recipe,  just cause im feeling that nice

2 1/2 c flour
3 tsp baking p
1 tsp salt
2 c sugar
1 stick butter
1/4 c shortening
1 1/2 c milk
2 eggs
2 tsp vanilla
20 ounce can of pineapple- or fresh cut
(2 tbl juice)
1 1/3 brown sugar
maraschino cherries ( not optional, they make it look soooo pretty and they taste soo dang good)
in a large bowl mix batter ( flour, salt, sugar, bake powder, 1/2 butter, shortening, milk, eggs, vanilla, and pineapple juice) Set aside
melt rest of butter in cast iron skillet, sprinkle brown sugar over entire surface.
place rounded pineapples on sugar, place cherries in side holes.
pour the batter over the top
bake for 30-40 min at 350
once done, instantly run knife around the edge.
place plate on top the the skillet and Flip It.
it should come right out.
faint from the smell and pure beauty.
come to,
then Eat it,
faint again.

The Big Day...As They Say

When I told Mike (my husband..Pictured above...in every photo.....you'll catch on) I was doing a blog, he asked if he was going to be in it...well sure, why not :) He's an insanely good husband, who i love to talk about, brag on, and just think about like all the time.. so he's bound to come up on here. so first and foremost.. before i get to blog crazy, i'll post some pics of the wedding day and how we met, especially if he asks, i can say " I blogged about you very first...sweety"

You can say Mike, Stole my heart away. I can try to throw excuses out there and beat around the bush, but when it really comes down to it, Mike stole me away.. from his best friend. 
I had dated his friend for a couple months before i had met Mike, and that very second when we finally did meet, we became best friends. I could and did talk to Mike all day everyday about any and everything. after about a year of dating his friend, it started to go down hill, and Mike was always there for me. When it finally ended, Mike........... confessed his love. I was weary. But i wanted it too.
We started to date, but then it began to come between his friend and him. Turns out the friend wanted what he couldn't have, or just didn't realize what he had til it was gone. what ever the case was, it wasn't good between them and i couldn't stand to do that... so i did the hardest thing i ever had to do (up til that moment) and broke it off with my best friend and new love. But Mike never gave up. We began to talk and date again after awhile and he had to have a hard talk with his friend and pretty much ask for his blessing. It took time, and it was hard on all of us, but the seas have calmed now. Mike and I dated for another year after that (mostly long distance) then we got engaged on February 26th 2010, at a lake... (i guess i'll save that story for another day.)
Because Mike had just been baptized a month before that, we decided to wait a year to get married, another year, Long Distance. That year was the hardest, yet most rewarding thing i've ever done!
We've been through alot together, but it makes us stronger. 
Its the best being married to My Best Friend!

Im a Blogger....

well, im a blogger. I don't know why i didn't get one sooner. I have lots of thing I like to do, and want to do in life and i didn't know how to go about...Getting it all out there. Then, a friend.. who actually has the same name as me asked why i didn't have a blog....
before i even answered her back I created my very own blog, "The Versatile Homesteader".
I'll brag and blog about cooking, decoration, making things, life on our little farm and being a  desperate  housewife
